Ingredients

8 servings

For the fruit

  • 800 g peaches, sliced
  • 4 tsp Peach Oolong powderSuperboba
  • 3 tbsp brown sugar
  • 1 tbsp corn starch
  • 1 tbsp lemon juice

For the topping

  • 1.5 cup all-purpose flour
  • 3 tsp Peach Oolong powderSuperboba
  • 2 tsp baking powder
  • 3 tbsp sugar
  • 0.5 tsp salt
  • 6 tbsp cold butter, cubed
  • 180 ml buttermilk

Steps

  1. Heat the oven to 190 C.

  2. Toss the peaches with the Peach Oolong powder, brown sugar, corn starch and lemon juice, then spread in a baking dish.

  3. Whisk the remaining Peach Oolong powder through the flour, baking powder, sugar and salt, then rub in the cold butter until it looks like coarse crumbs. Putting tea in the topping as well as the fruit is what makes this taste of oolong rather than just of peach.

  4. Stir in the buttermilk just until a shaggy dough forms. Do not knead it.

  5. Drop spoonfuls over the fruit, leaving gaps for steam to escape.

  6. Bake 35 to 40 minutes, until the topping is golden and the fruit bubbles at the edges.

Good to know

  • Leave gaps between the spoonfuls. A sealed lid of dough steams instead of browning.
  • Shaggy dough is correct. Worked smooth it bakes into a scone lid.
  • Rest 15 minutes before serving so the juices thicken.
