Ingredients

2 servings
  • 150 g fresh strawberries
  • 50 g white sugar
  • 2 tsp lemon juice

Steps

  1. Chop the strawberries small enough to travel up a boba straw.

  2. Mash or pulse until about two thirds is puréed and a third is still in pieces.

  3. Tip into a small bowl with the sugar and lemon and stir to coat.

  4. Cover and refrigerate at least 3 to 4 hours, ideally overnight.

  5. Pour off about 2 tbsp of the liquid that collects. This keeps the mix concentrated so your lattes are not watery.

  6. Use about 60 g per drink, spooned into the bottom of the glass.

Good to know

  • Sugar between 30 and 40 percent of the fruit weight. Less is fruitier, more is syrupier.
  • Draining a little liquid is the step people skip, and it is why homemade strawberry lattes usually taste thin.
  • Keeps five days. Works the same way with peaches or mango.
