Ingredients

1 serving

The base ratio

  • 60 ml heavy cream
  • 20 ml oat milk
  • 10 ml simple syrup
  • 1 pinch fine salt

Pick one flavour

  • 1 tsp any Superboba tea powder, whisked into 20 ml hot water firstSuperboba
  • 1 tsp vanilla extract
  • 1 tbsp kinako, cocoa, or black sesame paste
  • 1 tbsp liquid honey

Steps

  1. Combine the cream, oat milk, syrup and salt in a narrow jug. Narrow matters, because a wide vessel will not build foam.

  2. Add your flavouring. If it is a tea powder, whisk it smooth in hot water first and let it cool, or it will stay lumpy in the fat.

  3. Froth at an angle for 45 to 60 seconds, until it thickens but still pours off a spoon.

  4. Spoon over any iced drink.

Good to know

  • Stop while it still pours. Over-frothed foam sits on the drink like a hat and never marbles down through it.
  • The salt is not optional. Without it cold foam just tastes like sweet cream.
  • Dairy-free works with a barista oat cream, though it will be slightly looser.
