Ingredients

6 servings
  • 1 tin full-fat coconut milk
  • 480 ml cashew milk
  • 6 tsp Earl Grey powderSuperboba
  • 1 tbsp light brown sugar
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cardamom
  • 3.5 tsp vanilla extract
  • 1 pinch fine salt

Steps

  1. Put everything in a blender.

  2. Blend on high for about ten seconds, until completely smooth and slightly frothy on top.

  3. Taste and adjust. It should be spiced but not gritty; if you can feel the spice on your tongue, blend it another few seconds.

  4. Chill and serve in small glasses with nutmeg grated over the top.

Good to know

  • Freshly grated nutmeg over the top, not stirred in. It is the smell that makes this read as eggnog.
  • Small glasses. This is rich, and 8 oz is plenty.
  • Bergamot cuts through the spice better than a plain black tea would, which is why Earl Grey rather than Classic.
